Breakfast Pancakes

These are very popular at Simply Staffordshire Towers. Perfect for a Sunday breakfast and best of all…easy.

1 mug of plain flour
1 mug of milk
1 egg
1 tsp baking soda

Add the mug of flour and bicarbonate of soda to a large bowl and make a well in the centre. Break in the egg and with a balloon whisk or electric hand whisk and start to beat while slowly adding the milk. Whisk until you have a smooth batter, the consistency of double cream. If you wanted to, you could add blueberries, raisins or nuts at this stage.
Using a little butter or oil in a non stick frying pan over a hottish heat, dollop a spoon at a time into the pan. You will know when to flip when the edges go a little brown and there a bubbles on the top.Delicious served with honey, fresh fruit, golden syrup, natural yogurt…the choices are endless. Will serve about 6 people.
