Cheese Straws

Ok…so not rocket science but absolutely brilliant home made, additive free snack or picnic essential from Bertelin Farmhouse Cheese.

125g Plain flour
pinch of salt
1/2 tsp cayenne pepper
1/2 tsp mustard powder
100g unsalted butter, cilled & diced
100g Bertelin Derby cheese/Derby with chives, grated

Line a baking sheet with baking parchement and preheat the oven to 190`C/gas mark 6. Soft all the dry ingredients into a food processor and pulse until you have breadcrumbs. This can be done by hand too. Add the cheese and pulse again until the mixture comes together in a ball. Bring this together by hand and roll into a ball and slightly flatten. Wraop in clingfilm and place in the fridge for about 15 minutes. Once chilled, roll out the dough until about 1/4 inch thick and cut into strips. Place the strips on the baking sheet and bake for about 12 minutes until golden brown. Cool on a wire wrack and eat as soon as you like.
