Pea & Mint Summer Soup

This is delicious, delicate and dead easy! You can play with this recipe to suit what you have in the garden or to hand but pea and mint are still the main ingredients.

1 litre of chicken or veg stock
finely sliced onion
450g peas (fresh or frozen)
150g of spinach, watercress, chard or rocket.
2 good stalks of mint
salt & pepper
creme fraiche to taste

Pour the stock into a large saucepan and add the onion, seasoning with salt and pepper. Bring to the boil and simmer for 5 minutes until the onion is soft. Add the peas and bring back to the boil, simmering for a couple of minutes. Finally add the chopped leaves and simmer for no more than another 2 minutes. Simply liquidise the soup until smooth. you may find you need to put the soup through a seive for a really velvety finish. Swirl in the creme fraiche to taste. You could use single cream too if you prefer. This is a soup to brighten even dull summer days.
