Rosemary Roasted Potatoes

Simple, delicious, ideal for summer, winter, posh dinner or easy tea!

1 kilo of new potatoes (Charlotte is a great option)
handful of fresh rosemary (roughly chopped)
2-3 cloves of garlic
glug of olive oil
seasalt

Pre heat the oven to 180C/Gas mark 6. Wash the potatoes and pop in a pan of cold water and bring to the boil. Simmer for just 5 minutes and drain. Pat dry with a clean tea towel and pop into a large roasting tin. Glug over some olive oil, the rosemary & garlic cloves (whole) and finally sprinkle with salt. Place in the oven and roast for about 40 minutes until the potatoes are golden and crisp on the outside and soft on the inside. Perfect with summer meats, fish or salad.
